Sweet & Salty Date Bites

So it was last summer that I discovered the wonder of the date fruit otherwise known as the date palm. It has some pretty amazing abilities to naturally sweeten smoothies, transform into a raw caramel, make into a granola/protein bar and also provide a lot of nutrients. 

The date is packed full of healthy carbs, fiber, potassium, iron, calcium, manganese, magnesium, copper...and the list goes on. It is for all these reasons and their sweetness that they make great pre-workout snacks when combined with some goodies or naturally sweet bite-sized desserts. They're simple and easy to make whether you're making them for a one off snack or making a large quantity for a dessert.

Start by cutting your dates in half and removing the pit.

While there will be a natural little boat to stuff the date with when you remove the pit, use the end of a round tip knife or a small spoon to add a little shape and depth for more almond butter :) (or nut butter of your choice).

Using a knife stuff the date with nut butter, I like to use chunky to add more texture, but totally your preference.

Sprinkle with a little bit of coarse or flakey salt (flakey is the best, I ran out), this will amp up the flavor contrast.

Sprinkle with some unsweetened shredded coconut or topping of choice-cacao nibs or cinnamon for a healthy pre-workout snack OR add some chocolate chips or drizzle to amp up the sweetness OR dare I say a little chunk of bacon!?!

Ingredients: 

  • Medjool dates

  • Almond butter or nut butter of choice

  • Coarse or flakey salt

  • Topping of Choice: Unsweetened coconut, cacao nibs, cinnamon, chocolate etc.

What To Do: 

  • Cut the desired amount of dates in half and remove the pit.

  • Use the end of a round tip knife or a small spoon to add a little shape and scoop a small amount of almond butter into the boat.

  • Sprinkle with a little bit of salt.

  • Top with your topping of choice.

  • Enjoy pre-workout, healthy snack or for dessert!
