The Thai Spice

So I just got done traveling Asia on my honeymoon with Collin and of course we're definitely having some post honeymoon blues. To commemorate our time in Phuket Thailand, we decided to concoct a cocktail that would take us back to our happy place in a sip. 

As you may know, the Thai love their ginger and they quite possibly love SPICE more than anything. What would make us weak Americans break out into tears and a sweat, would be equivalent to the most bland food imaginable in Thailand. So we took just the right amount of spice we loved about Thailand and curated something delicious.

Without further adieu, I present to you The Thai Spice cocktail.

The Thai Spice Cocktail

  • 2 oz Gin (Hendricks is recommended here :)
  • 1 oz Ginger Spice Infused Simple Syrup*
  • 1 oz Lemon Juice
  • 1 Sprig of Thyme for Garnish
  • Shake all ingredients with ice, strain and serve o the rocks in a rocks glass

Ginger Infused Simple Syrup

  • 1 cup Sugar
  • 1 1/2 cups Water
  • 4-5 sprigs of thyme
  • 10-15 Whole Peppercorn
  • 2 oz Thinly Sliced Fresh Ginger

Simmer low for 30 minutes and cool. Store in refrigerator in a air tight jar. Makes enough simple syrup for approximately 8 drinks.

So as you know, this drink was curated as a way to ease our post honeymoon blues back into the real world. Well after we returned, I also had the chance to serve up our and share our delicious cocktail with my colleagues at FCB Chicago for our Makers Market, a farmers market-like event where everyone showcases their talents and has the opportunity to sell their artwork, products and concoctions. Thankfully the advertising world and FCB in particular likes to foster our creative 'side-hustles' and asked me to bartend the event. Myself and the awesome team I work with had a blast shaking up this spring cocktail for hundreds of our colleagues for the Spring Makers Market!
