Simple Gluten-Free Granola

Simple Gluten-Free Granola

Granola is a staple in my house and I always cringe at the boxes of cereal at the store because it's just packed with unnecessary sugar, so I try to make it as much as possible at home from scratch. Then when my acupuncturist Karissa asked for some simple recipes she can share with her patients and easy for any busy bee to throw together, I immediately thought that a simple hearty granola was the way to go.

You will find this is a very simple granola recipe packed full of protein and sans all the refined sugars. HUGE BONUS: it is also gluten free, so friendly for gluten sensitivities and celiacs!

Here's What You Need:

  • Large baking sheet lined with parchment paper
  • Large mixing bowl 
  • Wooden spoon
  • Preheat your oven to 350 degrees

Ingredients:

  • 1/2 cup Walnuts
  • 1/2 cup Almonds
  • 1/2 cup Pecans
  • 1/2 cup Pepitas
  • 2 tbsp Chia Seeds
  • 1/2 cup Buckwheat Groats (aka hearts)
  • 1 cup Gluten Free Oats
  • 1 tbsp Vanilla Extract
  • 2 tbsp Coconut Oil Melted
  • 1/4 cup Maple Syrup 
  • 1/4 cup Coconut Sugar 
  • Feel free to add 1/2 cup of any dried fruit of choice

Now before we get started, you might be thinking to yourself, well buckwheat doesn't sound gluten free, it says 'wheat' in the name. Not to worry, buckwheat isn't a wheat at all, it's related to the rhubarb and is indeed gluten free! These little seeds are packed with nutrients and this recipe alone boasts 11 grams of protein in just the 1/2 cup of buckwheat groats. 

So with that aside, let's get going. Start by adding all of the all of the nuts/seeds, oats and buckwheat ingredients into a bowl and mix all together.

Then add the coconut sugar and all of the wet ingredients into the bowl and mix throughly with a wooden spoon. 

Next, spread all of the granola evenly across your parchment lined baking sheet and pop in the oven for 12 minutes. 

After 12 minutes, take the sheet out and mix up the granola so it bakes evenly. Bake for another 12 minutes and take it out to cool. 

Make sure the granola cools completely before storing in an airtight container. Enjoy in a bowl of fruit and almond milk, with some yogurt or simply plain by itself!

What to Do:

  • Preheat your oven to 350 degrees.
  • Mix all dry nuts/seeds, oats, buckwheat into a bowl.
  • Mix in all wet ingredients and mix thoroughly.
  • Spread granola evenly on parchment lined pan and bake for 12 minutes.
  • Take out of the oven and mix up granola so as to evenly bake and leave in for another 12 minutes.
  • Remove from oven and let cool completely before storing in an air tight container for up to 2 weeks.
