Pea Pesto

I've found a new love for the ever so versatile pea this past year. I don't think I ate these much as a kid but I think my younger self would have devoured them more often if they weren't these mushy little things out of a plastic freezer bag. 

The trick about peas is you MUST buy them and consume them fresh, never frozen. They maintain such a different taste and texture you wouldn't believe. And like most produce, the sooner you consume them the better they are for you. Once peas are plucked from the vine and removed from their pods, they loose their nutrients very quickly and become very starchy so best to cook these green little gems up as soon as you buy them so you get the most bang for your buck.

Aside from making grain salads, sauces and tossing them in soups, I also make my absolute favorite Pea Pesto. I use this in sandwiches, on toast with an egg, on crackers for a snack, whatever I can put it on. It is so simple, healthy and a great way to work the little greens and up your veggie servings in your diet. 

Here's What You Need:

  • 10oz bag of fresh peas
  • 3 tbsp olive oil
  • 1-2 cloves of garlic to taste
  • Salt & Peppa

Here's What To Do:

  • Bring a pot of water to a rolling boil and add peas. Set the timer for 90 seconds and drain immediately following. Drop the peas into a food processor and add all remaining ingredients. 
  • Process until smooth and the taste of salt and pepper is to your liking and that's, that. A quick snack to have on hand, have it on toast for breakfast, have with carrots or cheese or take it to a party!

Keep refrigerated in an air tight container.
